From Sicilian Caponata to Insalata Mexicana, from Green Tea Noodles to Vietnamese Lemongrass Prawns, this book demonstrates the immense variety of salads and their potential to become the most flavourful part of a meal.

The chapters are organized by ingredient, from beans, lentils and grains; leaves and greens; vegetables; noodles and rice; to meat, fish and poultry; and each recipe includes advice on advance preparation and possible variations. There are recipes for tasty dressings, and feature spreads offer guidance on choosing and using ingredients. Written with wit and enthusiasm, the author's passion for salad shines through and will inspire everyone with a taste for healthy food.
