Lactose intolerance is caused by a lack of lactase (a type of enzyme) normally produced in your small intestine. This enzyme breaks down lactose, a type of sugar found in milk, so that it can be absorbed into the blood stream. When lactase is missing or depleted, lactose builds up in the large intestine, causing stomach cramps, wind and diarrhoea. Milk is the only dietary source of lactose, but lactose is present in products made with milk such as cheese and butter, and is also added to some prepared foods. There are several other reasons for choosing a dairy-free diet, including milk allergy, veganism, religion or those who are simply seeking a 'healthier' lifestyle. Dietitian Tanya Carr explains the difference between lactose intolerance, milk allergy and dairy reaction, their symptoms and how they are diagnosed. Dairy alternatives are explored and recent research is considered. A concern for both adults and children who cannot tolerate dairy is getting enough calcium into the diet, so this is addressed along with other dietary recommendations for eating dairy-free. Author Bio
Mini C is chef-patron of the famous Busabong restaurant, founded by her mother, in London's Chelsea. Mini has a great deal of experience cooking for audiences, for Good Food Live on Sky TV and at the BBC Good Food show as the 'face of Thailand' of Blue Dragon foods. Her cookbook 100 Great Thai Dishes is publishing in March 2005. Tanya Carr is an established freelance registered dietitian and nutritionist, specialising in dairy alternatives. She writes regularly for the medical and health press, appears frequently on TV and radio and has a private clinic in London.
