Tess Mallos has worked as a cooking consultant for over 30 years, developing recipes, writing books and magazine articles, and preparing food for photography and on television. Born in Australia to Greek parents, Tess has an outstanding knowledge of the Middle East. She has travelled extensively and spent many years researching the recipes of the region.
