While training he largely avoids red meat and animal fats, eats lots of fish, fruit and vegetables, some chocolate, and plenty of bread, and drinks a reasonable quantity of wine. Many of the book's recipes have become regulars at Michel's world-famous restaurant Le Gavroche.
